I used to make these with my friends Kim and Kristen at their house when we’d have sleep-overs. I’d just about forgotten them until recently, when I wanted to make some kind of chocolatey sweet with the boys but didn’t have any eggs. I remembered that Kim and Kristen’s mom, Charlotte, had submitted this recipe to the church cookbook years ago.
As I was mixing them up, I thought to myself that they looked a little weird and that they probably wouldn’t taste as good as I remembered them being.
But guess what? They’re just as yummy as when Kim and Kristen and I used to make them as kids. And really, they’re not actually cookies—more like candy. And they are ADDICTIVE!
Kim & Kristen’s No-Bake Cookies
1/2 cup butter or margarine
1/2 cup milk
1/4 cup cocoa
1/4 teaspoon salt
1/2 teaspoon vanilla
1/2 cup peanut butter
1 cup sweetened flaked coconut
3 cups oats (old-fashioned or quick-cooking)
Melt butter or margarine in large saucepan. Add milk, cocoa, sugar, salt, and vanilla. Bring to a rolling boil; boil for 1 minute. Remove from heat and stir in peanut butter, coconut, and oats.
Drop by teaspoonfuls on cookie sheet covered with wax paper. Chill to set (about 2 hours). Keep stored in fridge.
(The recipe doesn’t say, but I think it made about two dozen or so.)

This is a recipe I learned in Girl Scout Camp. I remember it clearly.
